CRANBERRY NUT BREAD
2 cups all-purpose flour
1 cup sugar
1 1/2 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
3/4 cup orange juice
1 tbsp. grated orange peel
2 tbsp. shortening
1 well beaten egg
1 1/2 cups fresh or fresh frozen cranberries, coarsely chopped
1/2 cup chopped nuts
Preheat oven to 350 degrees.
In a bowl mix together flour, sugar, baking powder, salt & baking soda.
Stir in orange juice, orange peel, shortening & egg.
Mix until well blended.
Stir in cranberries & nuts.
Turn into a greased 9 x 5 " loaf pan.
Bake for 55 min. or until toothpick inserted in center comes out clean.
Cool on a rack 15 min.; remove from pan. Makes one loaf.
