Cauliflower Parmigiana
1 Large cauliflower, cut into flowerettes
1/2 cup grated parmesan cheese
2 cups breadcrumbs mixed with an additional 1/2 cup of parmesan cheese
salt to taste
Boil Cauliflower in lightly salted water for 10-12 minutes, or until
tender, drain. Butter a shallow baking dish. Sprinkle dish with cheese.
Arrange flowerettes in dish and sorinkle with breadcrumb mixture. Put
dish in the oven for 8 minutes at 500 degrees. Remove from oven and
pour butter over the flowerettes.
