Ginger Monkfish
1 lb. monkfish
1 tbsp. grated ginger root
2 tbsp. sweet chili sauce
1 tbsp corn oil
3-4 oz. asparagus
3 scallions, sliced
1 tsp sesame oil
Remove outer membrane from monkfish. Slice monkfish into flat round
pieces.
Combine grated ginger rootr and swwet chili sauce in a small bowl.
Brush mixture over monkfish slices.
Heat corn oil in a large skillet or wok.
Add monkfish, asparagus and scallions and cook over medium heat for
about 5 minutes. Stir gently.
Sprinkle with sesame oil and toss before serving.
