Chili Meat Loaf
- 2 pounds lean ground beef (ground round)
- 3 tablespoons minced onion, or 1 tablespoon dried minced
- 1 to 2 teaspoons salt
- 1 teaspoon chili powder
- 1/4 teaspoon black pepper
- 1 teaspoon garlic powder
- 2 eggs, beaten
- 1/2 cup cracker crumbs
- 1 cup canned diced tomatoes (reserve remaining tomatoes for topping
or another use)
- 1 can (16 ounce) red kidney beans or pinto beans, well-drained and
mashed
Combine all ingredients; mix gently but thoroughly. Line a loaf pan
(9-X5-X3-inch) with aluminum foil; press meat mixture in pan. Bake at
350°for about 1 hour and 30 minutes, or until done.
Serves 8 to 10.
